Effects of high temperature and high pressure on the toxicity induced by modified T-2 toxins (mT-2s) in mice

Abstract: High temperature and high pressure technology is a technology that eliminates harmful microorganisms in food to achieve commercial sterile conditions without adding harmful substances such as preservatives. In order to investigate the toxic effect of the modified T-2 toxin (mT-2s) in mice induced by high temperature and high pressure treatment, through the mouse exposure experiment, mT-2s was treated under high temperature and high pressure, forty mice were randomly divided into mT-2s group (untreated), mT-2s group treated with high temperature and high pressure, negative control and positive control group, which were administered by oral to mice for 7 days. The immune organ index, bone marrow micronucleus rate, sperm deformity rate and serum biochemical indexes of mice were detected to analyze its change characteristics.The results showed that compared with that of the untreated group, the immune organ index, bone marrow micronucleus rate, sperm malformation rate and serum biochemical indexes of the mice treated with high temperature and high pressure were significantly different (P<0.05); compared with that of the positive control group, the immune organ index, bone marrow micronucleus rate, sperm malformation rate and serum biochemical indexes of mice treated with high temperature and high pressure were not significantly different (P>0.05). In summary, high temperature and high pressure treatment could cause mT-2s to release precursor toxins, thereby enhancing its toxic effect, warning that food safety issues caused by mT-2s residues in foods of animal and plant origin cannot be ignored.
